Stir Fry Cabbage
Heat in a large skillet:
2 tablespoons of oil (I use coconut oil or
olive oil)
Add:
2/3 cup of finely chopped onions or
scallions
1 to 2 cloves of garlic minced
Stir fry briefly. Add:
3 to 4 cups of finely sliced cabbage
½ to 1 cup of shredded carrots
½ cup of any other fresh vegetables you may
have available – I have used green peppers, spinach, squash and
snow peas
¼ cup of almonds
Stir fry about 5 minutes over a medium
heat, until the vegetables are crisp and tender.
Add:
1 teaspoon of salt to taste
A dash or two of pepper
2 to 3 tablespoons of tamari
Stir until blended and serve over a bed of
brown rice or kasha.
