Mashed Butternut Squash

Preheat oven to 400 degrees:

  • Place one large butternut squash or two small in the oven for approximately 15 to 20 minutes.  (This step is completed in order to make the squash easier to cut.)
  • Remove squash from oven.
  • Cut up the squash into chunks, discard pulp and seeds
  • Place chunks of squash in a large roasting pan, place in the oven
  • Pour enough water to cover the squash about ¼ inches. Check the squash from time to time, and to make sure it does not run dry.  Add water as needed.
  • Bake for approximately one hour or until tender
  • Remove from pan and place on cutting board.  Cool for ten minutes.

Add:

  • Remove skin from squash and place in a large bowl
  • 2 to 4 tablespoons of soft butter
  • 1 teaspoon of sea salt
  • ¼ cup of brown rice syrup or honey ( I have successfully added less.)
  • Dash of pepper

Stir until smooth and place into a serving dish and serve.   Amazingly simple, but oh so good!
